TOFU (Soya Paneer)

Tofu is made from soybeans.

soybeans are high in protein and a decent source of both carbs and fat.They are a rich source of various vitamins, minerals, and beneficial plant compounds, such as isoflavones.For this reason, regular soybean intake may alleviate the symptoms of menopause, reduce your risk of prostate and breast cancer and also reduces risk of heart diseases

Tofu is also known as bean curd .Itsoriginated in China and has been consumed within China for over 2,000 years. It is also a traditional food in countries likeIndonesia, Japan, Korea, Singapore and Thailand. It is most often treated as a meat substitute. Due to its nutritious value It has now become very popular food in North America, Europe and now India.


Tofu Chilli

Tofu is made from soybeans.
  • Take 200 gm of Mother Nature’s tofucutit into 1-inch cubes
  • Make the marinade by adding 1 tsp - garlic paste, 1 tsp - ginger paste ,2 tsp corn flour, 1 tsp - soy sauce
  • Add tofu cubes in marinade and mix well with enough water to make a paste.
  • Heat 2 tsp of the oil in a non-stick or cast-iron pan.
  • Saute the tofu cubes on all sides until they become golden-brown.
  • Remove it to a plate.
  • Heat the remaining 1 tsp of oil and add cumin seeds.
  • When they sputter, add ginger and garlic and onion.
  • Saute until the onion becomes transparent.
  • Now add the coriander powder, black pepper, and minced green chilly.
  • Toss to coat it with spices and then add the green pepper.
  • Stir-fry until the bell pepper starts to soften but ensure that it still has a good bite to it.
  • Now add the tofu cubes and toss them with the spices.
  • Add the soy sauce and the corn flour mixed with water (this will give the tofu a nice glaze).
  • Stir until well mixed and remove from the heat.
  • Toss in the coriander and serve hot.

Smoked Tofu and grilled veggi Salad

To start making Smoked Tofu And Grilled Vegetable Salad Recipe, heat a teaspoon of oil in the grill pan on medium heat. Add the vegetables to the hot pan and stir-fry till vegetables are cooked and yet firm to touch. Turn off the heat. Transfer the vegetables to a bowl and set aside while you smoke the tofu.

To prepare the smoked tofu, gently press the tofu with a kitchen towel to remove the excess water or moisture content.

Heat a teaspoon of olive oil in a pan, add the cut tofu and stir fry for a few seconds until warm. Turn the heat to low and allow the tofu to roast a bit. While it is roasting and we will proceed to prepare the coal.

To smoke the tofu, we will need a few pieces of large coal. Place the coal on the flame and allow it to become red hot. Once you notice that the coal is red hot, place the hot coal on a heatproof small bowl. Place this bowl on the deep pan where you have kept the tofu, add a teaspoon of ghee over the hot coal. It will begin to start smoking. At this stage, cover the deep dish pan and allow the tofu to absorb the smoke flavors.

Once the smoke has dissipated, turn off the heat on the tofu pan and the smoked tofu is ready to be served with the salad.

To prepare the dressing for the salad, in a salad mixing bowl whisk together soy sauce, sugar, sesame oil, ginger and garlic until well combined. Add the grilled vegetables and smoked tofu to this and stir well until everything is coated. Serve at room temperature.

TOFU TIKKA MASALA

Tofu is made from soybeans.

Cut the tofu into small cubes.Add in the chopped ginger and chopped garlic and then add coriander powder, garam masala powder, smoked paprika (or Kashmiri red chili powder), salt and red chilli powder.

Add in the yogurt and mix till all the tofu pieces are well coated with the spices and yogurt. Cover and keep this marinated tofu in the refrigerator for 1 hour. You can keep it overnight as well but minimum of 30 minutes is must. Use thick yogurt here, tie regular yogurt in a muslin cloth and let it hang for few hours. Once all the water has drained and yogurt is dry and thick, it’s ready to be used in the recipe.

While the tofu is in the refrigerator, prepare the curry. Heat oil and butter in a pan on medium heat. Once oil is hot, add cinnamon sticks and cumin seeds. Wait till cumin seeds crackle.

Add roughly chopped onions and cook till the onions start turning light golden brown in colour.

Then add ginger, garlic and cook for 1-2 minutes or till raw smell goes away.

Add chopped tomatoes, curry powder, sugar, Kashmiri red chili powder and salt. Give a good mix.

Cook the tomatoes with spices for around 10-12 minutes or until the tomatoes are completely done and oil leaves the side of the spice mix. This is very important, the masala should be nicely cooked on medium heat, don’t rush this.

Remove pan from heat, let it cool down a little and puree the mixture to a smooth paste. (wow what difference lighting makes, the colour of the curry was definitely not like what it looks in 2nd pic!!

Put pan back on heat again. Add the pureed onion-tomato paste back to it. Add water (adjust the amount of water as per your preference) and heavy cream and mix. Let the curry simmer on low for 3-4 minutes as you prepare the tofu.

Remove the marinated tofu from the refrigerator. Spray a pan with little oil and add tofu to it.

Roast/cook the marinated tofu cubes till they become brown in colour.Add the roasted tofu to the curry and let it all simmer for additional 2-3 minutes on low heat.Garnish with cilantro and serve tofu tikka masala with any bread of your choice. I enjoyed it with some plain rice.

TOFU Bhurji

  • To begin making the Tofu Bhurji Recipe, firstly crumble the tofu and keep it aside.
  • Heat a tablespoon of butter in a heavy bottomed pan; add the cumin seeds, onion, capsicum, green chillies and ginger. Saute the onions and capsicum on low to medium heat until they are soft and tender.
  • Once the onions and capsicum are soft, add the tomatoes, turmeric powder, red chilli powder and give it a good stir.
  • Finally, stir in the crumbled tofu and salt to taste. Stir well, check the salt and spice levels and adjust to suit your taste.
  • Serve the Tofu Bhurji Recipe along with a Toasted Bread or just plain Indian bread like Phulka and a Dal of your choice like Panchmel Dal, Palak Dal etc to enjoy your dinner.
